● Water solubility
Due to the introduction of carboxyl groups into chitosan molecules, the regularity of its crystals is destroyed, which greatly reduces the crystallinity. In addition, the introduction of hydrophilic groups significantly improves the water solubility of carboxymethyl chitosan compared with chitosan, and the water solubility increases with the increase of the degree of substitution of carboxyl groups. It can be dissolved in a wider pH range, and its application range is also expanded.
● Antibacterial property
Carboxymethyl chitosan has good antibacterial activity and has inhibitory effects on common food spoilage bacteria such as Staphylococcus aureus, Escherichia coli, and Bacillus subtilis. The minimum inhibitory concentration for Staphylococcus aureus is 0.1%, and the minimum inhibitory concentration for Escherichia coli and Bacillus subtilis is 0.2%.
● Film-forming property
Carboxymethyl chitosan has good film-forming property, and the film formed is smooth, transparent, flexible and breathable. Carboxymethyl chitosan aqueous solution can form a film at a mass fraction of 0.2%. As the concentration of the aqueous solution increases, the toughness of the film increases, the thickness increases, but the transparency decreases, and the color turns yellow; when the mass fraction of carboxymethyl chitosan is about 1%, the film-forming effect is the best.
● Adsorption performance
Chitosan is a natural biosorbent with good performance. It has a strong adsorption capacity for many metal ions and can be used to remove various toxic metal ions. Carboxymethyl chitosan molecules contain -OH, -NH2, -COOH and other groups. Compared with chitosan, it can more effectively complex metal ions.
● Hygroscopicity and moisture retention
